DD1 (4.5) wanted to make DH chocolate muffins for Father’s Day, so I found this recipe for us to try.   I had planned to make 12 of them, but we didn’t have enough cocoa for that so we only made 6, and then made another 6 with chocolate chips in.

I have no idea what we did wrong, but the chocolate ones were awful!  They didn’t rise & didn’t taste good (picture hidden at the bottom of the page). Luckily the chocolate chip ones were lovely, so DH did get to enjoy a few cakes on Father’s Day.

Ingredients

In a Bowl

  • 150g Plain Flour, sieved
  • 1tsp baking powder
  • chocolate chips

In a Jug

  • 1 egg
  • 60g sugar
  • 2tbsp oil
  • 100ml milk

Instructions

  1. preheat the oven to 160C put the bowl ingredients into the bowl
  2. mix the egg,milk, oil and sugar together in the jug
  3. pour the egg mixture into the bowl and mix until combined but still lumpy
  4. spoon mixture into cake cases and put the tray in the oven at 160C for 20 until set and cracked at the top if not quite set put back in for a further 10 mins
