Pumpkin Flax Granola

So there is this lady called Emily who has some lovely recipes which I am slowly working my way through… so far I have got as far as breakfast!

This was nice, & must be incredibly healthy as it contains hardly any oil, but we all adored prefered the maple pecan & peanut butter honey versions, so probably won’t be making this one again.


  • 3 cups oats
  • 0.25 cup ground flaxseeds
  • 0.5 cup pumpkin puree
  • 0.25 cup maple syrup
  • 1 tsp oil (coconut or canola)
  • 1 tsp vanilla extract


  1. Preheat oven to 350F.
  2. Line a baking tray
  3. In a large bowl, mix together the oats and ground flaxseeds.
  4. In a smaller bowl, combine maple syrup, pumpkin, oil, and salt.
  5. Combine wet ingredients in with dry, and mix until oats are evenly coated.
  6. Spread mixture into a thin layer on the baking tray.
  7. Place in oven and bake for 25 minutes.
  8. Remove from oven and let cool completely.
  9. Break oats into bite-sized chunks and transfer to a storage container.
