Beany Tacos

Flushed by the success of recent Fajhita Quesadilla meals I thought I would try Tacos.

I stuck to the tried & tested Rose Elliot beany sauce, although I forgot to put the red pepper in the pan, so we had that as an accompaniment along with some avocado, grated carrot, salad & grated cheese.

Everyone loved it!  DD2 (1.9) wasn’t too keen on the Taco shells, but (as usual) scoffed the beany mix down as fast as she could.  DD1 (4.3) ate them quite happily, although she did ask if next time she could have bread instead of the taco shells!

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red pepper, deseeded & chopped
  • 2 garlic cloves, finely chopped
  • 2 tsp cumin seeds
  • 1 tin tomatoes
  • 1 tin kidney beans
  • taco shells

suggested accompaniments

  • 1 large ripe avocado, chopped
  • 1 red pepper, deseeded & chopped
  • 1 small red onion
  • 1 small iceberg lettuce
  • 1 carrot, grated
  • 150ml greek yogurt
  • chopped fresh coriander

Instructions

  1. put the oven on 
  2. heat the oil in a pan
  3. add the onion & pepper
  4. cover & cook for about 7mins until tender but not browned
  5. add the garlic & cumin seeds and cook for another 2-3mins
  6. add the tomatoes & cook, uncovered for 15mins until thick
  7. put your chosen accompaniments into serving bowls
  8. add the kidney beans to the tomato sauce & heat through
  9. when everything is ready, put the bean mixture into a serving bowl
  10. put the tacos in the oven
  11. serve
