Now its getting colder, I’m craving a warm breakfast. Porridge is fine, but I wanted to have something fruity & this looked just perfect!
DD1 (3.11) & DD2(1.5) both love this! Although the recipe below serves two, there is enough for them to have a small amount too (they’ve usually had a bowl of cereal while I’m making it!)
The original recipe says that the linseeds should be ground, but we think it’s just fine with them whole.
- 500g mixed frozen berries
- 1 tablespoon brown sugar
- 1 tsp ground cinnamon
- 4 tablespoons linseeds
- 0.5 cup unsweetened shredded coconut
- Stir the berries and brown sugar together in a microwave-safe bowl; heat on High until the berries are hot, about 2 minutes, stirring once about 1 minute into the heating process.
- Stir the cinnamon, linseeds and coconut into the heated berries and serve
