Mini pies

Saw these mini pies on Pinterest & thought I’d try to make something similar.

DD2 (1.4), DH & I loved them. DD1 (3.10) picked them apart & ate a few of the “crispy bits” <sigh>

If I do make them again, I need to make more, or serve them with alot of accompinments (not sure what though – chips?)


  • 100g broccoli, broken up into tiny florets
  • 150g sweetcorn
  • 1 carrot, grated
  • 100g cheese, grated
  • 0.5 cup bisquick
  • 0.5 cup milk
  • 2 eggs


  1. Pre-heat the oven to 190deg
  2. Grease a 12 hole muffin tray
  3. Steam the broccoli
  4. Let it cool a little & mix with the sweetcorn, carrot & cheese
  5. Mix the bisquick, eggs & milk
  6. Put a tbsp of the bisquick mix in each of the muffin tray holes
  7. Put a couple of tbsp of the veg mix in each hole
  8. Top with another tbsp of the bisquick mix
  9. Cook for 30min
  10. Leave to stand for 10min before taking out of the tin
