Traffic Light Smoothie

DD1 saw a picture of this in my Vegetarian Society magazine last month &  asked if we could make them.

The recipe was published as part of this year’s National Vegetarian week – everything was breakfast based this year, but they have hundreds of other recipes on their site – why not take a look?!

I halved the original recipe & made 4 glasses, enough for DD1, DD2 me & DH – except DH was late home from work, so DD1 drank his!

Ingredients

Green layer:

  • 2 kiwi, peeled and chopped
  • 1/2 pear, peeled and chopped
  • 1/8 honeydew melon, sliced
  • 75ml apple juice

Amber layer:

  • 1 mango, peeled and stoned
  • 1/8 honeydew melon, sliced
  • 50ml orange juice

Red layer:

  • 100g strawberries
  • 50g raspberries
  • 1/8 honeydew melon, sliced
  • 50ml cranberry juice

Instructions

  1. Place the green layer into a blender and thoroughly whizz. Transfer to a separate jug and rinse out the blender.
  2. Repeat with the remaining layers.
  3. To serve, share the green layer between four glasses. Carefully spoon over the amber layer and finally the red layer. Serve straight away.
