Another recipe from liveinazoo.
This started off so well. The fruit in the spiced water smelt delicious, it all looked great when we put it in the tin. But then DD1 fiddled with the timer on the oven, so I think it ended up being in the oven for far too long & the currants on the top got burnt, and the top & sides were just too crispy to eat.
The middle was quite dense (a bit like a malt loaf rather than a fruit cake), but perhaps I shouldn’t have been surprised as it didn’t contain any egg, SR flour or Baking Powder, but I had just assumed that was what the Bicarb was for.
- 225g dried mixed fruit
- 230ml boiling water
- 1tsp cinnamon/mix spice
- 1tsp vanila
- 85g brown sugar
- 225g plain flour
- 1tsp bicarbonate of soda
- preheat oven 190C/375F/gas 5/fan 170C
- line 1lb loaf tin
- put spice, fruit and water in a pan. leave for 10mins
- stir in sugar and vanilla
- add flour and soda
- pop straight into tin and bake 45mins
