Asparagus & poached eggs


How unfortunate that the first 2 spears of asparagus were ready to pick when there was only me at home to eat them!

Ingredients

  • asparagus
  • 2 free-range eggs
  • 0.5 tsp vinegar

Instructions

  1. Put the kettle on
  2. trim & wash the asparagus
  3. fill the steamer & a pan with the boiling water and bring back to the boil
  4. Put the asparagus in the steamer & set the timer for 7 minutes
  5. add the vinegar to the pan of boiling water
  6. crack the eggs into two ramikins
  7. when there is 3 minutes left on the timer, it’s time to put the eggs on
  8. turn the heat down & slowly add the eggs to the water
  9. turn the heat back up & bring the water to a simmer – the eggs should take about 2 minutes
  10. carefully remove the eggs from the pan with a slotted spoon & serve immediately with the asparagus
