Cheesy potato bake

Another recipe stolen from zoo 🙂  DD2(10m) & I loved it. DD1(3) refused to even try it, claiming that she “didn’t like cheese” <rolls eyes>


  • handful spring onions or an onion,finely sliced.
  • 2 potatoes
  • little dried thyme or parsley
  • 1 garlic clove ,crushed
  • 1 red pepper, fine chopped
  • 1 tsp marmite
  • 200ml low salt veg stock
  • large handful cheese


  1. gently fry the onion in some oil
  2. thinly slice potatoes and put a layer in an ovenproof dish
  3. top 1/3 onion and 1/3 peppers
  4. sprinkle little dry herbs over
  5. repeat layering x2
  6. mix stock, garlic and mamite and pour over
  7. cover with foil and bake 220oc/425of/gas 7 for 30mins
  8. uncover and bake 30mins more until spuds are tender and most liquid evaporated 
  9. sprinkle cheese over and bake another 5-10mins til bubbly and golden
