lentil and carrot burgers

I’ve stolen this (and several other recipes) from a fellow FlyLady on the mumsnet Good Housekeeping boards (honestly, that’s not quite as sad as it sounds…. no really!)

I made half the quantity for DD2 (9m) & I to have for lunch, and regretted it as DD2 scoffed most of them (I made 8 mini-burgers), and the majority of the guacamole, leaving me to eat the possibly-slightly out of date tomato salsa with some toast (I did get two burgers – they were yummy)

Ingredients

  • 125g red (or brown or green) lentils
  • 2 carrots, grated
  • 1 tbsp dry parsley
  • 3 spring onions, fine chop
  • 2 garlic cloves, crushed
  • 2 slices bread turned into breadcrumbs
  • egg (you might need this to bind them together, I didn’t)
  • extra crumbs/polenta for coating
To serve
  • english muffins or pitta bread
  • guacamole
  • potato wedges

Instructions

  1. cook lentils til very soft. rinse under water til cold (or just leave draining in a sieve while you get on with chopping & grating the rest of the ingredients)
  2. mix with carrots,parsley,onions,garlic and crumbs
  3. mash together with a fork (or a potato masher if you prefer)
  4. attempt to form into 4 burgers, if it doesn’t work – add the egg (beaten)
  5. coat crumbs/polenta
  6. spray tray with oil add burgers and spray tops.20 mins 200oc/400of/gas 6 til browned
