Tomato & courgette pasta

This is based on a recipe in Annabel Karmel’s New Complete Baby & Toddler Meal Planner. In it she says it only takes 10mins to prepare, but she includes fresh, skinned & de-seeded tomatoes in the ingredients! I used tinned as it’s so much easier & if you get whole tomatoes you can easily remove the seeds too.

Feeds 1 adult & 1 baby

Ingredients

  • 100g pasta, uncooked
  • 1 courgette (approx 120g), trimmed & diced
  • 50g butter
  • 1 tin of whole tomatoes
  • 50g cheese, grated
Instruction
  1. put the kettle on so you have some water to cook the pasta
  2. put the butter in a pan on a low heat
  3. while it’s melting, trim & dice the courgette
  4. saute the courgette in the butter for about 5mins
  5. put the pasta on
  6. add the tomatoes & cook  over a low heat for 5mins
  7. remove from the heat & stir in the cheese until melted
  8. puree in a blender 
  9. when the pasta is cooked, stir it into the sauce
