Frosty Stew

From Baby And Child Vegetarian Recipes.  DD1 & I used to eat this alot when she was younger, hopefully her sister will like it too.


  • 4 tbsp veg oil
  • 1 large onion, chopped
  • 1 clove garlic, crushed
  • 2 sticks celery, sliced
  • 2 large carrots, peeled & cut into chunks
  • 2 large parsnips, peeled & cut into chunks
  • 225g butternut squash, cubed
  • 25g plain flour
  • 400ml low salt veg stock
  • 1 tbsp vegetarian Worcestershire sauce
  • 1 tbsp dried parsley
  • 2 bay leaves
  • 2 tbsp tomato puree
to serve
  • mashed potatoes or rice
  1. Pre-heat the oven to 180C
  2. Heat the oil & fry the onions, garlic & celery until golden
  3. Add the rest of the veg & continue frying until they are lightly browned
  4. Sprinkle the flour over the veg & stir well
  5. Add the stock,  Worcestershire sauce, herbs & tomato puree
  6. Bring to the boil, stirring
  7. Transfer to an oven-proof dish (or slow cooker??) & cook for about 45mins or until all the veg is tender
