Cauliflower cheese


175g cauliflower

Cheese Sauce
15g butter
1 tbsp plain flour
150ml milk
50g cheese, grated


  1. put the kettle on for the steamer
  2. break the cauliflower up into small florets & wash it.
  3. Steam until tender (about 10 mins)
  4. meanwhile, melt the butter in a pan over a low heat & then stir in the flour to make a SMOOTH paste.
  5. add the milk slowly, stirring all the time.
  6. When it’s nice & thick, take off the heat & add the cheese.
  7. Keep stirring until all the cheese has melted & the sauce is smooth
  8. Add the cooked cauliflower to the sauce
  9. Puree, mash or chop as required.
