leek & potato puree

DD2 doesn’t seem very keen on potato at the moment, but I’m trying to make meals that we can all eat together, and I’ve got lots of leeks so thought I’d give this a go.  It’s from AK’s meal planner.

Ingredients

  • 25g butter
  • 125g leeks, finely sliced
  • 250g potatoes
  • 300ml low salt stock
  • 2 tbsp greek yogurt

Method

  1. Heat the butter in a saucepan
  2. Add the leeks & cook over a low heat for 5 minutes
  3. Add the potatoes and pour over the stock
  4. cover & cook until tender (about 12 mins)
  5. strain the veg & puree, adding as much of the cooking liquid as necessary
  6. stir in the yogurt

Verdict?
This went down very well 🙂
