Another one from Annabel Karmel‘s “Baby & Toddler meal planner”

The girls both loved these when they were younger, but today DD1 (4.3) nibbled a corner & said she didn’t like them & DD2 (1.9) ate one & just played with the next one I gave her. <sigh>

Oh well, I like them, so I’m planning to have them for lunch tomorrow in a sandwich with some hummus!


  • 75g carrot (roughly half a carrot)
  • 75g courgette  (roughly half a courgette)
  • 75g potato  (roughly half a potato)
  • 1 onion
  • 3 tbsp ground almonds
  • 2 tbsp plain flour
  • 2 tbsp lightly beaten egg


  1. grate the carrot, courgette, potato & onion
  2. cup small handfuls of it in your hand & squeeze out the excess moisture
  3. put the veg in a bowl & mix with the almonds, flour & egg
  4. season to taste
  5. using your hands, form into 6 rissoles
  6. saute in veg oil until golden on both sides & cooked through (about 6min)

Vegetarian. One husband, Two cats, Three kids.
