Spag Bol (slow cooker)

The GPs are going to be coming round every Monday morning to look after DD2, while I take DD1 swimming so I need some easy & substantial (they are carnivores) food to have ready for lunch when we get back.

I’ve made spag bol in the slow cooker before, but have only ever made something based on a regular recipe, it was interesting to see this one (specifically for the slow cooker) didn’t have ANY extra fluids added.

Ingredients

  • 1 large onion, chopped
  • 3 cloves garlic, crushed
  • 1 pack quorn mince
  • 1 1/2 tsp dried basil
  • 3 tins chopped tomatoes
  • 3 tsp sugar
  • 2 low salt stock Cubes
  • 1/2 tsp pepper

Method

  1. The night before, put all ingredients except for one tin of tomatoes in slow cooker & stir well.
  2. spread the remaining tin of tomatoes over the top.
  3. In the morning, put on high
  4. eat for lunch

Verdict?
Oh wow – this is *so* easy & *so* very yummy!

Note to self: I made double and it fed 6.5 of us with another 6 portions to go in the freezer!

    I’m not veggie but have been thinking about trying to eat a little less meat, and coincidentally found a pack of Quorn mince in the depths of the freezer. I’m going to give this a try.
