Spinach, Beetroot & Apple salad with Goats Cheese

no idea where this came from


  • 80g bag baby spinach (washed)
  • 2 x 250g packs whole baby beetroot cut into wedges
  • 2 crisp eating apples, cored & sliced into wedges
  • 1 small red onion, halved & finely sliced
  • 125g goats cheese, broken into small pieces

for the dressing

  • juice of 1 lemon
  • 6 tbsp olive oil
  • 1 tsp wholegrain mustard
  • salt & pepper to taste


  1. divide the spinach leaves between 4 plates, top with the beetroot & apple wedges and scatter the onion over
  2. mix together the dressing ingredients
  3. divide the goats cheese between the plates & pour over a generous drizzle of the dressing to serve

Vegetarian. One husband, Two cats, Three kids.
