Red Pepper & Sweet Potato soup

I think this might be a YAWYE recipe, but I can’t find it online & can’t be bothered to walk to the kitchen to look it up…

It’s yummy, which is the main thing, but does stain small children’s clothes!

Ingredients

  • 1 onion, chopped
  • 2 red peppers, quartered
  • 1 sweet potato, quartered
  • 2 carrots, sliced
  • 1 tbsp olive oil
  • 1 garlic clove, sliced
  • 900ml boiled water
  • 1 stock cube
  • freshly ground black pepper
  • fresh basil leaves to serve

Method

  1. gently cook the onion, peppers, potato, carrots & garlic in a pan with the oil until softened
  2. add hot water & stock cube
  3. bring to the boil, then simmer for 15-20min
  4. leave to cool for 20min
  5. blend
  6. return to the pan & heat through
  7. season with the black pepper
  8. serve, garnished with basil leaves
