Nadine told me this recipe – she puts some alcohol (Grand Marnier?) in it, but I don’t like booze in my puddings, so I don’t.
1 pack of silken tofu
1 bar of dark chocolate
a punnet of raspberries
- melt the chocolate (I do it in the microwave)
- blend the tofu (it takes a while, but it will stop being “bitty”)
- add the chocolate to the tofu & blend (again, this takes a while but it will stop being “bitty”!)
- add a squeeze of honey, blend some more
- put the mix in ramekins
- top with fruit
- put in the fridge
mmmm… yum yum yum.
A word of warning, I once made this using 2 bars of chocolate- waaaaaay too rich!
