Tortillas

Try serving your tortillas with sliced avocado and coriander tossed in a little lime juice.

Serves 2

Ingredients

1 onion
2 cloves garlic, crushed
1 tin tomatoes
some chilies

4 large flour tortillas , seeded or plain
1 tin kidney beans , drained and roughly mashed 
2 spring onions, chopped
85g grated mature cheddar
dried coriander (optional)
oil , for brushing

Method 

  1. Heat some oil in a pan, add the onion & cook until soft.  Add the garlic & the tin of tomatoes.  Cook until thick
  2. Spread half the tomato mix onto 2 of the tortilla, then evenly top them with the beans, spring onion and cheddar. Scatter with coriander. Sandwich with the other tortilla, then brush with oil.
  3. Heat a large non-stick frying pan, then cook the tortilla, oil-side down, for 2 mins. Carefully turn over with a palette knife (or by turning it out onto a plate, sliding it back into the pan), then cook for 2 mins on the other side until golden. Serve cut into wedges.
