Pesto Pasta

We have this loads as it’s so quick & easyIt would might be even nicer if you bought proper pesto for it, but I struggle to find a nice one that’s vegetarian and doesn’t cost too much.


  • half a pack of quorn chunks
  • penne
  • a large head of broccoli
  • 4 cloves garlic, crushed
  • olive oil
  • loads of dried basil & parsley
  • stock powder
  • pine nuts
  1. put the kettle on
  2. heat some oil in a biggish pan (you’ll end up with everything in here)  and gently brown the quorn chunks
  3. put the pasta & brocolli on to cook (I do it in the steamer)
  4. mix up some (errr… 200ml?) double strength stock
  5. when the quorn has browned & the pasta+brocolli are nearly cooked add the stock to the quorn & stir – the quorn will soak up some of it & there should just be a little bit left as a sauce.
  6. drain the brocolli & pasta
  7. add the garlic, basil, parsley & pine nuts to the quorn – stir
  8. add the pasta & a good glug of olive oil to the quorn – stir well
  9. add the brocolli to the quorn & gently stir
