thai vegetable stir fry

A Rose Elliott recipe (from “Vegetarian Express“)

Serves 2

100g jasmine rice

2 tbsp sesame oil

1 onion, chopped
1 red pepper, deseeded & thinly sliced
1-2 tbsp thai red curry paste
200ml coconut milk
150ml water
125g baby sweetcorn, halved lengthways
125g mangetout, half lengthways
1 courgette, cut into 5mm slices
dried coriander


  1. put the kettle on
  2. mix up the coconut milk (i always make it from the creamed coconut)
  3. put the rice on
  4. heat the sesame oil in the wok
  5. add  the onion and the red pepper to the wok
  6. cook for 5 mins
  7. stir in the curry paste, coconut milk & water
  8. bring to the boil, then add the sweetcorn, mangetout, & courgettes
  9. cook for 5mins until the veg is tender
  10. add the coriander & serve with the rice
