A Rose Elliott recipe (from “Vegetarian Express“)

DH & I love this, it’s a good one to make early & then just reheat when needed (like when DH gets back from the supermarket). We often make double & freeze some for a really quick & easy meal another day.
so… I made it for tea at the weekend, so DD1 could try it – she likes wraps, tomatoes, potato beans (you may know them as kidney beans!), red onion, avocado & yogurt – surely this can’t fail?  I made it with a bit less cumin than usual (just 1 tsp), but no…. Big Fail.  She took one look at it & got upset because we didn’t have any spready cheese or cucumber – i.e. this wasn’t the usual wrap meal I provide! In the end she ate the wraps filled with just yogurt & avocado! <sigh>

Update: August 2012

I gave this to DD1 (3.10) & DD2 (1.3) today.  DD2 had a deconstructed version of it, but just couldn’t get enough! She was quite literally shovelling it into her mouth!  DD1 did eat a wrap this time (I had to cut it up into quarters for her), but one was apparently enough, as she then asked for one with just yogurt, avocado & pepper in.
Serves 2


  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 red pepper, deseeded & chopped
  • 2 garlic cloves, finely chopped
  • 2 tsp cumin seeds
  • 1 tin tomatoes
  • 1 tin kidney beans
  • wraps


  • 1 large ripe avocado, chopped
  • 1 red pepper, deseeded & chopped
  • 1 small red onion
  • 1 small iceberg lettuce
  • 150ml greek yogurt
  • chopped fresh coriander


  1. put the oven on (I like to heat the wraps in the oven)
  2. heat the oil in a pan
  3. add the onion & pepper
  4. cover & cook for 7mins until tender but not browned
  5. add the garlic & cumin seeds and cook for another 2-3mins
  6. add the tomatoes & cook, uncovered for 15mins until thick
  7. meanwhile, put the wraps in the oven
  8. add the kidney beans & heat through
  9. put the accompaniments (avocado, lettuce, red onion & yogurt) into bowls
  10. put the bean mixture in another bowl
  11. put the wraps onto a warmed plate
  12. let everyone help themselves

  1. When we have fajitas, ds usually has soured cream and grated cheese in his, rather than the peppers and courgettes etc. I always put a little of the peppers on his plate though and now he is older he (sometimes) will eat it. Don't give up. She might surprise you when you least expect it.
