Quorn Spag Bol

another Quorn recipe from their book. My parents came round to babysit this morning & then stayed for lunch so I made this first thing & popped it into the slow cooker to keep warm.

350g Quorn Mince
2 tbsp olive oil
1 large onion, finely chopped
1 large carrot, finely chopped
1 stick celery
2 garlic cloves, crushed
2 x 400g tin chopped tomatoes
200ml vegetable stock
1 tsp dried oregano
1 tsp dried majoram
1 tbsp tomato purée

Heat the oil in a saucepan and fry the onion, carrot celery and garlic gently for 5 minutes.
Add the tomatoes, tomato purée, dried herbs and vegetable stock. Stir well.
Cook over a low heat for 8-10mins until veg is cooked.
stir in the Quorn mince & cook for another 10mins

serve with spaghetti
