veg & lentil broth

I’m always hoping to find another lentil soup that’s as good as my favourite, so when I found this recipe I had to try it.  I had to change it a bit as I was missing a few of the ingredients, but it still turned out very nice…


  • 200g lentils – the recipe says to use brown, but I used a mix of red & green
  • 100g bulgar wheat (the recipe says to use pearl barley, but I didn’t have any)
  • 3 pints water * 1 bay leaf
  • reduced salt veg stock cube
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 ginger slices, peeled and minced
  • 2 celery sticks, trimmed & chopped in 1/4 inch slices
  • 1 carrot, peeled and sliced
  • 1 leek
  • 1 butternut squash.
  • 1 tin tomatoes
  • 2 Tbsp unsalted tomato paste* 1/2 tsp dried thyme leaves
  • 1/2 tsp dried marjoram leaves
  • 1/2 tsp dried rosemary leaves
  • 1 tsp paprika
  • 1/2 tsp gr cumin
  • 1 tsp gr coriander
  • fresh ground pepper to taste
  • 1/4 cup chopped fresh parsley


  1. Add all ingredients except salt, pepper and fresh cilantro to the cold crockpot, turn on low and cook for 8 hours
  2. Remove bay leaf, add pepper & fresh parsley about 15 minutes before serving

Vegetarian. One husband, Two cats, Three kids.
