Chickpea Curry (slow cooker)

Ingredients:

  • 2 tbsp oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch ginger, peeled and grated
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tin. can chickpeas
  • 1 tin chopped tomatoes
  • 1/2 tsp garam masala

Directions:

  1. Rinse and drain the chickpeas thoroughly before using them
  2. In a pan, sauté oil, onions, ginger, and garlic for 5 minutes
  3. Place onion mixture and all other ingredients except for garam masala in the slow cooker
  4. Cook on low for 6-9 hours. Before serving, add garam masala

Verdict?
Personally, I though it was a bit meh, but DH really liked it.  The original recipe suggested adding some veg (carrots or peppers) to it, so i’ll do that next time.
